Spring time at Saragossa Game Reserve

September has finally arrived, the cold August winds are a thing of the past and everyone eagerly awaits the first rainstorm of this new season!

Everywhere new life is appearing, blossoms on our fruit trees, new grass shoots in the bush and soon the Elands Valley will once again be transformed from a rich golden brown to a vibrant green colour.  In front of the lodge our Saragossa guests are treated to sightings of blesbuck, impala, zebras and of course, as always our graceful journey of giraffes.

Our Saragossa vegetable gardens are also once again full of the freshest vegetables and herbs for our chefs to use when preparing meals for our guests. This season we will concentrate even more on farm to table freshness, simplicity and of course deliciousness!

When walking through the vegetable gardens with our agri manager, Caroline Kruger to see what she had growing for us I was ecstatic to find what is waiting for us. Plump tomatoes, baby marrows oozing with freshness and chillies so bright it immediately brought a smile to my face.

Spring is indeed a time to celebrate and I can hardly wait to share our crisp lunch time salads, spinach & feta roulade, slow roasted leg of lamb with char grilled vegetables or any one of the pickles we make (the perfect accompaniment for chef Zama’s homemade bread) with you.
